Bamboo Rice Salad with Herbed Buttermilk Dressing

INGREDIENTS

  • 1½ qts. vegetable stock or water
  • 2 c. buttermilk
  • 1 c. mayonnaise
  • 3 T. lemon juice
  • 1 T. kosher salt   
  • ½ c. mint, chopped
  • 3/4 c. chives, chopped
  • 4 c. spinach leaves, fresh, rough chopped
  • 4 c. snow peas, julienned
  • 4 c. cucumber, thinly sliced
  • 2 c. feta cheese

Directions

  1. Bring water to a boil. Add InHarvest Bamboo Rice, return to a simmer and cook, covered, for 12 minutes. Cool.
  2. Whisk together the buttermilk, mayonnaise, lemon juice, kosher salt, mint and chives.
  3. Combine cooled rice with spinach, snow peas, cucumber and feta cheese.
  4. Add dressing and toss to combine.

Recipe Yield: 24 (1 c.) servings
