INGREDIENTS
- 2 lbs. Bamboo Rice
- 1½ qts. vegetable stock or water
- 2 c. buttermilk
- 1 c. mayonnaise
- 3 T. lemon juice
- 1 T. kosher salt
- ½ c. mint, chopped
- 3/4 c. chives, chopped
- 4 c. spinach leaves, fresh, rough chopped
- 4 c. snow peas, julienned
- 4 c. cucumber, thinly sliced
- 2 c. feta cheese
Directions
- Bring water to a boil. Add InHarvest Bamboo Rice, return to a simmer and cook, covered, for 12 minutes. Cool.
- Whisk together the buttermilk, mayonnaise, lemon juice, kosher salt, mint and chives.
- Combine cooled rice with spinach, snow peas, cucumber and feta cheese.
- Add dressing and toss to combine.
