Apple-Cranberry Sunrise Breakfast Parfait

  • Sunrise breakfast parfaits in three cups

INGREDIENTS

  • 2 3/4 lbs low fat vanilla yogurt
  • 1 3/4 pints applesauce
  • 1 3/4 pint apple, chopped
  • 14/ cup dried cranberries

Directions

  1. Cook InHarvest Sunrise Blend with Quinoa Flakes® according to package directions. Let stand for 20 minutes, covered.
  2. Drain excess water and cool completely.
  3. Mix the cooled grains with yogurt.
  4. Separately, mix the applesauce and apple together.
  5. Place 1 cup applesauce mixture into each of 7 (16 oz) clear parfait cups. Top each with 1 cup Sunrise Blend/yogurt mixture.
  6. Sprinkle cranberries (about 2 teaspoons) atop each parfait and serve.

Chef Tip

To prevent cut apple from browning (oxidizing), sprinkle with lemon juice and toss well.
